Cod "à la méditerranéenne"

Cod is fish with a light taste, ideal for the whole family and a great source of protein, iodine, and selenium.
Cooked tomatoes are rich in vitamin A and lycopene, a powerful antioxidant with anti-cancer and anti-inflammatory properties. Olives are rich in omega-9 fatty acids.
This cod recipe with tomatoes and olives gives you a good dose of omega-3, 6, and 9 fatty acids.
For 2 people:
2 fresh cod fillets
2 handfuls of cherry tomatoes
2 handfuls of green and/or black olives
1 lemon
Herbes de Provence
Salt, pepper
Instructions:
Preheat the oven to 180°C
Place the cod fillets in an ovenproof dish with a little water.
Scatter halved cherry tomatoes and olives in the dish.
Squeeze the juice of half a lemon over the fish. Cut the other half of the lemon into slices and arrange them in the dish.
Drizzle a generous amount of olive oil, sprinkle with salt, pepper, and Herbes de Provence. The herbs should form a light crust on the fish.
Bake for 15 minutes in the preheated oven.
Serve with brown rice.
