Simple summer salad with zucchinis, shrimps and feta cheese

I love this simple summer salad, full of freshness, flavors and so easy to make!

Zucchini is rich in fiber and antioxidants, and contains potassium.

Shrimp is rich in protein, zinc, iron, and contains vitamins B6 and B12 as well as omega-3 fatty acids.


For 2 people :

300g of cooked pink shrimps

3 large zucchinis

75g of feta cheese (1/2 square)

1 lemon

2 tablespoons of olive oil

A few sprigs of chives and fresh coriander

Salt & pepper


Instructions:

Wash and peel the zucchinis.

Using a peeler knife or mandoline, cut the zucchinis into long, thin strips.

Place the zucchinis in a bowl with olive oil and lemon juice. Let it marinate for about 20 minutes. The zucchinis will "cook" in lemon juice.

Meanwhile, remove the skin of the shrimps, cut the feta cheese into small pieces, and chop the herbs.

Just before serving, add the shrimps, feta cheese, and herbs to the bowl with the zucchinis. Season with salt and pepper.

Tips: I love herbs of all kind, they add colour to any dishes but are also very aromatic and nutrient-denses. Add as much as you feel like in this dish !
